Garden Zucchini





Zucchini holds energy to protect health, increase prosperity, deepen spirituality, and empower psychic abilities.





I love growing squash and zucchini is one I start from seed every year and later transplant when the weather warms. There are few garden plants that produce as generously as zucchini.





Slow roasted zucchini is one of the easiest and most delicious methods to use up a daily zucchini.





Simply slice a zucchini into planks and drizzle with olive oil. Sprinkle with salt, pepper, and garlic powder and turn to coat. Roast in a 400 degree oven for 20 minutes. Top with parmesan to intensify the flavor.





Zucchini quick bread is also another tried and true favorite.


Zucchini Bread

3 cups flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

3 teaspoons ground cinnamon

3 eggs

1 cup melted butter

2 1/4 cups sugar

3 teaspoons vanilla extract

2 cups grated zucchini

Preheat oven to 325. Grease and flour a bread pan, or muffin tins.

In a mixing bowl add all ingredients and mix to incorporate. Spoon batter into prepared pan and top with coarse sugar. Bake 40 to 60 minutes for bread or 30 minutes for muffins. A toothpick inserted into the center should come out clean.
